Pretzels

INGREDIENTS

1 qt warm water
4oz butter
1.5oz yeast
4oz sugar
1.25oz salt
3lb 10oz AP Flour
Boiling Solution
1 gal water
6oz Baking soda

INSTRUCTIONS

1. Warm milk and butter in sauce pan, combine all dry ingredients. Straight dough method.
2. Knead dough for 8-10 mins, let rise for half an hour or until double in size. Scale into desired size for rolls, or pretzels.
3. Prepare boiling solution, once water has come to a boil drop in a few rolls at a time for no more than a min.
4. Once drained from solution sprinkle with salt and cut a cross into the top of the roll.
5. Bake in a 400 degree oven, until brown.
